1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt
2 cups milk (or a dairy-free alternative)
1 cup cottage cheese
2 large eggs
½ cup maple syrup or honey
1 teaspoon vanilla extract
2 tablespoons melted butter
2 tablespoons brown sugar
1 teaspoon cinnamon for topping
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with butter or cooking spray.
In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt; stir well.
In another bowl, whisk together the milk, cottage cheese, eggs, maple syrup (or honey), and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients, stirring until fully combined.
Pour the oatmeal mixture into the prepared baking dish, smoothing out the top with a spatula.
