2 cups of cottage cheese
2 large eggs
1 cup of almond flour
1 teaspoon of baking powder
1 teaspoon of garlic powder
1 teaspoon of Italian seasoning
Salt and pepper to taste
1 cup of marinara sauce
2 cups of shredded mozzarella cheese
1 cup of assorted vegetables (bell peppers, mushrooms, onions, spinach)
½ cup of sliced olives (optional)
1 teaspoon of red pepper flakes (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and smooth.
Lightly grease a 9x13 inch baking dish with olive oil or non-stick spray.
Pour the cottage cheese mixture into the prepared baking dish and spread it evenly across the bottom.
Spread the marinara sauce evenly over the cottage cheese base.
Sprinkle the shredded mozzarella cheese over the sauce.
Add your choice of vegetables and olives on top of the cheese.
Sprinkle red pepper flakes on top if desired.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and allow to cool for a few minutes before slicing into squares.
