1/4 cup melted coconut oil

1/4 cup Greek yogurt
1/4 cup peanut butter (or almond butter)
1/4 cup chocolate chips (semi-sweet or dark)
1/4 cup chopped peanuts
1/4 cup caramel sauce (store-bought or homemade)
1/2 cup chocolate chips (for drizzling)
1 tablespoon coconut oil (to melt with chocolate for a smoother drizzle)
Extra chopped peanuts (optional, for garnish)
Instructions
In a mixing bowl, combine the rolled oats, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until well combined. The mixture should be slightly sticky but hold together when pressed; if it's too dry, add a teaspoon of water.
Line an 8x8-inch baking dish with parchment paper for easy removal. Press the oat mixture firmly into the base of the dish, creating an even layer that is compact. Refrigerate for about 15 minutes to set.
In a medium bowl, combine the cottage cheese, Greek yogurt, peanut butter, chocolate chips, chopped peanuts, and caramel sauce. Mix thoroughly until you achieve a smooth and creamy consistency.
Once the base is set, remove it from the refrigerator. Spoon the cottage cheese filling over the base and spread it evenly.
In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is fully melted and smooth.
Using a spoon or a piping bag, drizzle the melted chocolate over the filling in a zig-zag pattern. Add extra chopped peanuts on top if desired.
Return the dish to the refrigerator and chill for at least 2 hours or until firm.
