  1. In a medium bowl, combine the flour and salt. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water until the dough comes together. Form into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer to the dish, pressing gently into the bottom and up the sides.
  5. Prick the bottom of the crust with a fork and bake for about 10-12 minutes until lightly golden. Let cool slightly.
  6. In a large bowl, whisk together the cottage cheese, eggs, milk, garlic powder, black pepper, and salt until smooth. Stir in the spinach and shredded cheese.
  7. Pour the filling into the pre-baked crust, spreading evenly. Sprinkle extra cheese on top if desired.
