  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine quinoa, vegetable broth, cumin, and chili powder. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is fluffy and liquid is absorbed.
  4. Stir in black beans and corn; cook for an additional 5 minutes.
  5. Remove from heat, drizzle with olive oil and lime juice, and season with salt and pepper to taste.
  6. Serve with avocado slices and cilantro on top.
