1 tablespoon ground ginger
1 cup cottage cheese (preferably whole milk)
1/4 cup unsalted butter, melted
1 large egg
1 teaspoon pure vanilla extract
1 egg, beaten (for egg wash)
Extra sugar for sprinkling

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, lemon zest, and ground ginger until well combined.
In a separate bowl, combine the cottage cheese, melted butter, egg, and vanilla extract. Mix until smooth and creamy.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix.
