4 (6-ounce) white fish fillets (such as cod, halibut, or tilapia)
1/4 teaspoon red pepper flakes (optional for heat)
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and sliced
1 lemon, thinly sliced
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, parsley, oregano, red pepper flakes, salt, and pepper to create a flavorful marinade.
Place the fish fillets in a shallow baking dish. Pour half of the marinade over the fish, ensuring each fillet is well coated. Allow the fish to marinate for at least 15 minutes.
After marinating, arrange the cherry tomatoes and Kalamata olives around the fish in the baking dish. Drizzle the remaining marinade over the top.
Lay the lemon slices over the fish and vegetables.
