1 pound large shrimp, peeled and deveined
1 cup cherry tomatoes, halved
1 cucumber, diced
1 bell pepper (red or yellow), diced
1 red onion, thinly sliced
1 ripe avocado, diced
4 cups mixed greens (such as arugula, spinach, or romaine)
1/2 cup feta cheese, crumbled
1/4 cup Kalamata olives, pitted and halved
1/4 cup fresh parsley, chopped
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced

Instructions
In a medium bowl, toss the shrimp with 1 tablespoon of olive oil, salt, and pepper. Set aside to marinate for about 10 minutes.
Heat a grill pan or outdoor grill over medium-high heat. Cook the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from heat and let cool slightly.
