Parmesan Zucchini Bites are a delightful way to enjoy summer squash, transforming fresh zucchini into delicious, crispy snacks. This recipe is not only easy to prepare but is also a healthy appetizer option that can be enjoyed by everyone.
Ingredients
Scale:
2 medium zucchini (about 6-7 inches long)
1 cup breadcrumbs (preferably whole wheat or gluten-free)
1/2 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1 teaspoon Italian seasoning (optional)
1 large egg
1 tablespoon olive oil
Additional grated Parmesan cheese for sprinkling
Fresh parsley or basil for garnish (optional)
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Wash the zucchini thoroughly and slice each zucchini into about 1/4-inch thick rounds.
In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, black pepper, and Italian seasoning. Mix well until evenly combined.
In another bowl, whisk the egg and olive oil together until fully blended.
Dip each zucchini round into the egg mixture, then coat it in the breadcrumb mixture, pressing lightly to ensure the coating sticks. Place on the prepared baking sheet.
Bake the zucchini bites for 20-25 minutes, flipping them halfway through until golden brown and crispy.
Remove from the oven and sprinkle with additional Parmesan cheese if desired. Let cool slightly before serving, garnishing with fresh parsley or basil.
