4 medium sweet potatoes (approximately 2 pounds), peeled and cut into 1-inch cubes
3 tablespoons olive oil, extra virgin
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lime, juiced
1/4 cup fresh cilantro, chopped (optional for garnish)
Instructions
Preheat the oven to 425°F (220°C).
In a large mixing bowl, combine the sweet potato cubes, olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss well to ensure all the sweet potatoes are evenly coated.
Spread the sweet potatoes in a single layer on a large baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown.
Once done, remove from the oven and squeeze fresh lime juice over the top.
