Ingredients
Scale:
1 pound gnocchi (store-bought or homemade)
1 pound Italian sausage (mild or spicy)
1 pint cherry tomatoes, halved
8 ounces broccolini, trimmed and cut into 2-inch pieces
3 tablespoons olive oil
2 teaspoons Italian seasoning
Salt and pepper, to taste
Fresh basil, for serving
Grated Parmesan cheese, for serving
Instructions
Preheat your oven: Set your oven to 425°F (220°C).
Prepare the gnocchi: In a large bowl, toss the gnocchi with 1 tablespoon of olive oil, 1 teaspoon of Italian seasoning, and a pinch of salt and pepper.
Prepare the sausage: If using links, slice the Italian sausage into bite-sized pieces.
Add the vegetables: Add the halved cherry tomatoes and broccolini to the bowl. Drizzle with the remaining 2 tablespoons of olive oil and the rest of the Italian seasoning.
Spread on a baking sheet: Transfer the gnocchi, sausage, and vegetable mixture to a large, rimmed baking sheet.
Roast in the oven: Place the baking sheet in the preheated oven and roast for 20-25 minutes.
Garnish and serve: Once cooked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil and grated Parmesan cheese.
