4 salmon fillets (about 6 ounces each)
1 pound broccoli florets
2 tablespoons olive oil
Salt and pepper, to taste
1/4 cup fresh orange juice
2 tablespoons soy sauce (low sodium recommended)
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
2 tablespoons honey or maple syrup
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the orange juice, soy sauce, grated ginger, minced garlic, honey (or maple syrup), sesame oil, and red pepper flakes.
Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the salmon, ensuring it’s well-coated. Let it marinate for at least 15 minutes.
Toss the broccoli florets with olive oil, salt, and pepper in a large bowl until evenly coated.
Line a large baking sheet with parchment paper or foil. Place the marinated salmon fillets in the center and arrange the broccoli around them.
