Ingredients
Scale:
2 cups all-purpose flour
1/2 cup granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup whole milk
1/4 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
8 oz cream cheese, softened
1/4 cup powdered sugar
1 tablespoon lemon juice
1/4 teaspoon vanilla extract
1 cup fresh strawberries, hulled and diced
2 tablespoons granulated sugar
1 tablespoon lemon juice
1 cup whipped cream or cream cheese frosting
Optional: additional diced strawberries for garnish
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
In a separate bowl, combine the milk, melted butter, eggs, and vanilla extract. Whisk until smooth.
Pour the wet mixture into the dry ingredients and gently mix until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.
If making baked donuts, preheat your oven to 350°F (175°C) and grease a donut pan. If frying, heat oil in a deep pot until it reaches 375°F (190°C).
Spoon or pipe the donut batter into the prepared donut pan, filling each cavity about halfway. For fried donuts, use a spoon to drop the batter into the hot oil in small rounds.
For baked donuts, bake for 10-12 minutes or until golden brown. For fried donuts, fry for about 2-3 minutes on each side until golden and p■. Remove from oil and drain on paper towels.
In a mixing bowl, beat the softened cream cheese with powdered sugar, lemon juice, and vanilla extract until smooth and creamy.
Once the donuts have cooled, use a piping bag to fill each donut with the cheesecake filling. Top each donut with whipped cream or cream cheese frosting, followed by the strawberry topping.
