Summer Berry Jello Lasagna

  1. In a medium saucepan, bring 2 cups of water to a boil over medium heat. Once boiling, remove from heat and whisk in the berry-flavored gelatin until fully dissolved. Allow it to cool slightly at room temperature.
  2. In a separate bowl, combine the heavy whipping cream, softened cream cheese, powdered sugar, and vanilla extract. Beat on medium speed until the mixture is smooth and creamy.
  3. Pour half of the prepared gelatin mixture into the bottom of the 9x13 glass baking dish. Place in the refrigerator to set for about 30 minutes.
  4. Once the first layer is set, remove the dish from the refrigerator. Spread half of the creamy layer over the gelatin layer.
  5. Sprinkle half of the sliced strawberries, blueberries, and raspberries evenly over the creamy layer.
  6. Pour the remaining gelatin mixture over the berries. Return the dish to the refrigerator for another 30 minutes to set.
  7. Once the second gelatin layer is firm, spread the remaining creamy mixture over it, and top with the rest of the fresh berries.
  8. If desired, pour any leftover gelatin mixture over the top. Cover the dish tightly and refrigerate for at least 4 hours, or overnight.
  9. When ready to serve, cut the Summer Berry Jello Lasagna into squares and garnish with additional fresh berries and mint leaves.
